Overnight Iced Tea with Fruit & Herb Infusion

Suzanne’s Sustainable Sips

Ingredients:

For brewing tea in larger quantities like quarts or pitchers, the general rule is to use one tea bag per 8 ounces of water.

  • For 2 quarts (64 ounces) of water, you would use 8 tea bags.
  • For a personal pitcher of 32 ounces, you would use 4 tea bags.

This should give you a well-balanced strength for most types of tea, whether you are making iced or hot tea. Adjust according to taste preference; some might prefer it stronger or milder! 

 (green tea, black tea, or herbal tea work beautifully) 

1 cup of mixed fruits (berries, peaches, lemons, limes, oranges, or mangoes), fresh or frozen

Optional:

Herbs (mint, basil, or rosehip) for an aromatic touch and additional vitamins and antioxidants

Honey or flavored syrup for sweetness, adjust to taste

Instructions:

STEP 1

Prepare the Fruit
If using fresh fruit, wash and slice them into thin pieces. Frozen fruits can be used directly without thawing.

STEP 2

Assemble the Tea
In a large pitcher, add the tea bags and fill it with the filtered water. Ensure the tea bags are submerged. Add your choice of sliced or whole fruits into the pitcher. If you’re using herbs, add for an extra layer of flavor and benefits. I like to use rosehips in mine. Dried rosehips not only add a unique flavor to your iced tea but also contain concentrated nutrients like vitamin C, antioxidants, and bioflavonoids.

STEP 3

Sweeten (Optional)
If you prefer a slightly sweeter tea, stir in honey or flavored syrup.

STEP 4

Infuse Overnight
Cover the pitcher and place it in the refrigerator overnight, or for at least 6-8 hours. This slow infusion process allows the tea to develop a deep, rich flavor without any bitterness.

STEP 5

Serve
Once the tea has steeped, remove the tea bags and, if desired, strain out the fruits and herbs for a smoother drink. Serve the iced tea over ice cubes; add fresh slices of fruit and a sprig of herbs to each glass for garnish.
