Do Nuts Expire? Everything You Need to Know About Their Shelf Life

Nuts, like most natural foods, do have a shelf life. Although they don’t spoil in the same way fresh foods do, they can go rancid over time due to their high oil content. Different types of nuts have varying storage times depending on their fat composition and how they’re stored. Generally, raw nuts last longer than roasted ones because the roasting process can accelerate the breakdown of oils.

In a cool, dry environment, most raw nuts can last anywhere from 6 to 12 months. Refrigeration can extend their shelf life to around a year or more, while freezing them can preserve their freshness for up to two years. Roasted or flavoured nuts have a shorter shelf life due to the processing and exposure to heat.

How to Tell if Nuts Have Gone Bad

When nuts go bad, they usually develop a rancid taste and smell. This is due to the oxidation of the oils in the nuts, which can lead to an off-putting, bitter flavour. Fresh nuts typically have a mild, slightly sweet or earthy aroma, while rancid nuts may smell sour or like old cooking oil.

Other signs that nuts have gone off include a change in texture. Fresh nuts are usually firm and crisp, but when they spoil, they may become soft, rubbery, or discolored. Mould growth is another clear indicator that the nuts are no longer safe to eat, though this is rarer in nuts stored properly.

The Best Way to Store Nuts

Proper storage is key to extending the life of your nuts. To prevent them from going rancid, always store nuts in a cool, dry place. Air-tight containers are ideal, as exposure to air can speed up the oxidation process. If you live in a warm or humid climate, refrigeration is recommended to maintain their freshness for longer.

For maximum longevity, consider freezing nuts. Simply place them in a sealed bag or container to avoid moisture, and they will keep for up to two years without losing flavour or quality. When you’re ready to use them, just let them come to room temperature before eating or cooking.
